      1620 Savoy's Braised Turnip Greens

      Braised Turnip Greens

      1 lb fresh greens, chopped1 T shallot, chopped 1/2 T garlic, chopped 1/2 T jalapeo, chopped 4 oz bacon, diced 1/8 cup balsamic vinegar 1/8 cup sugar

      Method

      Sweat bacon, shallots, jalapeo and garlic in large saut pan

      Add sugar and let caramelize

      Add greens and let cook for 3 to 4 min

      Add balsamic vinegar and cook down for 10 min

      Season to taste
