Baked Salmon, 1/8/12


2 6oz portions of wild msc sockeye salmon

2 cloves of garlic (minced)

1/2 of a small red onion (julienned)

1/2 of a bell pepper (julienned)

1 small yellow squash (julienned)

1 small zucchini (julienned)

4-6 asparagus stalks (cut in 2"-3" pieces on a bias)

1 lemon (cut in 8 wedges)

1/2 tsp of thyme

Salt and pepper

Parchment paper


Preheat oven to 350 degrees. Season salmon with salt andpepper. Combine the rest of the ingredients and wrap in parchment paper. Placeon sheet tray cook for 25 mins.
