      Bok Choy with Mushrooms & Shallots

      2{}{}{}{}{}{}{} tbl olive oil

      1{}{}{}{}{}{}{} pkg. (8oz) sliced mushrooms, rinsed

      1{}{}{}{}{}{}{} tsp minced garlic

      1 1/2{}{}{}{} lbs. bok choy. Rinsed and chopped into approx. 1-inch pieces

      2{}{}{}{}{}{}{} tsp soy sauce

      1{}{}{}{}{}{}{} tsp lemon zest

      {}{}{}{}{}{}{}{}{} Salt & pepper to taste

      In a large skillet or wok, heat oil over medium-high heat.{} Add mushrooms, shallots and garlic; stir-fry until mushrooms darken, about 5 minutes.{} Add bok choy and stir-fry for about 8-10 minutes or until tender.{} Drizzle with say sauce, lemon zest , salt and pepper to taste.
