      Broiled Walleye with Blueberry Buerre Blanc, 6/20/13

      INGREDIENTS

      • 2 7oz Filets of Walleye
      • 1 STICK Unsalted Butter
      • 3 TBSP Chopped Shallots
      • 1/4 CUP Sundried Blueberries
      • 1 Bay Leaf
      • 1 CUP White Wine
      • 2 TBSP White Balsamic Vinegar
      • Salt
      • Pepper

      WALLEYE

      1.{}Brush Walleye filets with butter on both sides

      2.{}Place on broiler pan, salt & Pepper both sides

      3.{}Broil at 450 degrees for @ 7-10 minutes

      4.{}Remove from heat and keep warm

      BUERRE BLANC

      1.{}While the fish is broiling, combine & reduce the wine,blueberries, shallots, vinegar, and bay leaf to almost dry (au sec)

      2.{}Reduce the heat & whisk in one stick of butter

      3.{}Salt & pepper to taste

      Plate Walleye andladle buerre blanc over top
