      Chicken Tagine, 10/12/2011

      {}1 tablespoon olive oil2 cups onion, dicedcook onion for about 5 minutes in skillet and add:{}1 tablespoon cumin1 teaspoon paprika1/2 teaspoon cinnamon1/2 teaspoon salt1/2 teaspoon pepper1 tablespoon ginger, grated2 garlic cloves, minced1 pound chicken, use the boneless and skinless and cut into bit sized piecescook for a couple of minutes and add:{}2 cups chicken broth1 cup butternut squash, peeled and cubed1/4 cup green olives10 pitted and dried plums, choppedbring to a boil, cover and reduce heat to a low simmer, cook for another 10 minutes are until chicken is done and squash is tender.{}Serve over couscous (I cook my couscous in chicken broth and add a little pine nuts or pistachios for a little extra punch of flavor).
