Chili Mango Chicken, 9/28/2011

by Gary Duke at Alley Oops{}1 pound chicken, I like the thighs, but you can use breasts, cut into bit sized pieces.1 tablespoon cornstarch2 tablespoons soy sauce2 teaspoons sesame oilmix above together and let marinate for 15 minutes.{}Meanwhile in a large skillet or wok heat:1 tablespoon canola oil and add:1 red onion2 cloves garlic1 or 2 tablespoons grated ginger, freshcook for a few minutes and add:{}2 cups sugar snap peaschicken with marinadecook till chicken starts to brown, about 5 minutes and add:{}1 mango, peeled, pitted and chopped2 tablespoons chili garlic sauce{}cook until chicken is done and mango become saucy (about another 5 minutes).serve over rice
