      Heart Healthy Recipe: Cold Quinoa Salad

      COLD QUINOA SALAD

      3{}{}{}{}{}{}{}{} cups vegetable stock1 1/2 cups dried quinoa 1/4 {}{}{}cup chopped green onion 1/2 {}{}{}tsp minced garlic3{}{}{}{}{}{}{}{}{} tsp chopped pimento1{}{}{}{}{}{}{}{}{} tsp salt1/3{} cup olive oil2/3 cup white balsamic vinegar

      In a large saucepan, bring the vegetable stock and quinoa to a boil.

      Stir briefly, add onion, garlic

      Cover, and simmer until liquid nearly all absorbed by the quinoa (grains will open)

      Once cooled on stove, put in serving dish

      Add salt, pimento, olive oil and balsamic vinegar, stirring in gently

      Serve cold
