Corn and Frito Salad, 4/23/14

      By Gary Duke at Alley Oops 2 cans corn, drained 5 green onions, diced 1/2 purple onion, diced 1 bell pepper, diced 2 tomatoes, diced 1 cup mayonnaise 1/4 cup cream cheese, softened 2 cups cheddar cheese, grated 1 avocado, diced salt and pepper bag of Fritos 1. In a large mixing bowl, combine corn, green onion, purple onion, bell pepper, and tomatoes. 2. Gentle fold in mayonnaise, cream cheese and cheddar cheese. 3. Season to taste with salt and pepper. 4 Just before serving toss in the avocado and Fritos. Optional: add cooked shrimp, crab, sautéed mushroom, celery or black beans to this dish, it is very versatile!
