4 cup corn, best to use 4 fresh ears, cut and scrap the ears if available

1 small onion, diced

1/2 bell pepper

1 tablespoon Jalapenos, diced{}(optional)

3 tablespoons butter or bacon grease


saute above for about 5 minutes are until tender and add:


1 cup tomatoes

1/2 cup sour cream

1/2 cup heavy cream or 1/2 and 1/2

salt, pepper and garlic to taste

1 teaspoon hot sauce


cook for a few minutes till mixture starts to thicken and add:


3 or 4 green onions, diced

more hot sauce if desired


This is a southern Louisiana favorite, that can be served as a side dish, or topped with sauteed shrimp are crab. Enjoy!!!
