Creamy Zucchini with Linguine, 8/1/12

2 tablespoons olive oil

2 large zucchini, sliced thin

1/2 red bell pepper, diced

1/2 onion diced

salt, pepper and garlic

saute{}above in oil till tender and add:


1/2 cup milk or cream

1/2 cup sour cream

crushed red pepper flacks

cook until all is hot and mixed together and add:


12 ounce package linguine, cooked as directed on package and drained.

1 cup parmesan cheese

toss all together and top with parsley and extra Parmesan cheese
