Dinner Pancakes, 6/5/13

This a wonderful twist on traditional pancakes, instead of a sweet and butterypancake, lets make them savory and perfect for a quick dinner.

Basic pancake recipe

1 1/2 cups all-purpose flour

2 tablespoons sugar- eliminate this ingredient for this recipe

1 teaspoon baking powder

1/2 teaspoon baking soda

pinch of salt

2 eggs

1 1/2 cup buttermilk

Mix above together, minus the sugar and add:

1 cup grated cheese

Set aside the batter and get together the following:

1 cup diced ham

1 cup frozen or canned English peas

1. In a non stick skillet, over medium high heat pour your pancake batter intoskillet (I use a little butter or cooking spray to make sure they don"tstick). In the middle of pancake (before you flip them) add a little ham andpeas, sprinkle the ham and peas around the pancake to{}get a little inevery bite.2. Cook till bottom of pancake is brown, 1 or 2 minutes{}and flip thepancake over. Cook till that side{}is brown, keep warm till all pancakesare cooked and top with a sour cream and chives.

Note: you can use a variety of vegetables or meats in this recipe, justwhatever you and your family likes. You can also use Bisquick or a pre-mixedpancake to make it easier.
