Mediterranean Style Mahi Mahi, 2/15/13

1/2 cup diced tomatoes

1/4 cup diced onions

1/4 cup diced mushrooms

3 tbsp diced capers

3 tbsp extra virgin olive oil

2 tbsp white wine

1 tbsp minced garlic

1 tbsp seasoned salt

1 tbsp chopped parsley

2 - 6 oz filets of Mahi Mahi (or other fish)


Mix all ingredients as far ahead as the day before and letall flavors marry. Place small amount of the mixture in bowl, then place fishon top and add remaining marinade. Let sit 1 hour. Bake fish on top of thevegetables in a 475 degree oven for approximately 5-10 minutes. Serve withlemon garnish.
