Pasta with Smoked Oysters, 1/4/12

16 ounces linguine or spaghetti, cooked as directed{}on package, I use whole wheat.


In a skillet saute:

2 tablespoons olive oil

1 cup red bell pepper, diced

1 cup onion, diced

2 cups fresh mushrooms, sliced

cook till veggies are crisp tender and add:


1 small can smoked oysters, you can use smoked salmon if you prefer

2 handfuls fresh spinach

salt, pepper and garlic to taste

cook just until spinach begins to wilt


add drained pasta to skillet and toss together, top with parmesan cheese and serve.
