      Porter's Jazz Cafe Shrimp and Grits 10/4/2011

      PORTER'S JAZZ CAFE'S SHRIMP AND GRITS

      4 C chicken stock

      salt and pepper

      1 C grits

      3 tbls butter

      2 C sharp cheddar cheese

      2 dashes Tabasco

      1 clove minced garlic

      {}

      bring chicken stock to simmer. add grits whisking constantly. garlic, Tabasco. cook for 20 mins

      when thickened add butter and sharp cheddar cheese.

      SHRIMP

      1 lb peeled and devained shrimp

      2 andouille sausage diced

      2 tbls parsley

      sprig of thyme

      1 C green onion

      1 garlic clove minced

      1/2 C chicken stock

      1 tbls butter

      squeeze of lemon

      {}

      cook sausage.add shrimp, thyme, green onions and garlic. cook for 1 min.add chicken stock and parsley.cook for 2 more mins. take off heat. add butter and stir. squeeze of lemon. pour over grits
