      Sandy's Chopped Salad, 6/15/12

      Trios serves 4 - 6 For the salad components: I head romaine lettuce, coarsely chopped 2 cups mixed lettuces 1 lb. roasted chicken breast, shredded 1 quart mixed local cherry tomatoes, cut in half 8 slices bacon, fried crisp, rough chop 4 oz. crumbled gorgonzola cheese, plus 1/2 c. additional for garnish 1 c. marinated artichoke hearts, rough chop 1 c. lightly toasted walnuts chiffonade of fresh basil, for garnish For the dressing: 3 T. sour cream 1 T. stone ground mustard 1 T. minced chives 1 T. chopped parsley juice of 1 lemon zest of 1 lemon salt and pepper to taste Mix all ingredients together in a bowl and set aside. To assemble the salad, place lettuces in a large mixing bowl.{} Add chicken and walnuts.{} Toss with the dressing.{} Add remaining ingredients and toss lightly.{} Mound on individual plates or serve in a bowl family style.{} Garnish with fresh basil and remaining gorgonzola.
