      4 Large Sea Scallops

      1/4 Cup Blueberries

      1 Tbspn butter

      1 Tbspn minced shallots

      2 Tbspn unsalted butter

      Salt & Pepper to taste

      Sear scallops in hot skillet with 1 tbspn butter on both sides. Then finish cooking in a 400 degree oven for 4-5 minutes. Remove scallops, then add shallots and blueberries. Cook approx. 2 minutes until berries start to burst, then add butter, salt and pepper to taste.
