Seared Beef with Red Wine Mushrooms, 11/23/12

      1 Tbsp Olive Oil

      4 6oz Steaks

      Ferneau Seasoning to taste

      1/4 cup diced Onion

      3 cloves Garlic

      1/2 lbs Mushrooms

      1 cup Red Wine

      1 cup low-sodium Beef stock

      2 tsp Rosemary


      1. Preheat oven to 400. Heat oil in a large cast iron skillet. Sear Seasoned Steaks until a deep brown crust forms on both sides


      2. Place Skillet w Steaks in the oven, about 6-8 minutes until the thickest part of the steak reaches 135. Remove from pan then let rest on cutting board


      3. Place Pan w drippings back on stove w Medium heat & add onion, garlic, mushrooms, & Rosemary. Saute about 3 minutes stirring w a wooden spoon then add wine & stock. Reduce by half scraping the bottom of the pan w a wooden spoon..


      4. Place Beef on a plate, spoon sauce over the top..... Done
