      Sesame Tuna, 12/19/13

      • 5 oz piece sushi grade tuna
      • 1 cup sesame seed-laced Panko breadcrumbs
      • 1/2 cup flour
      • 1/2 cup egg wash (2 eggs, 1/4 cup milk)
      • 2 tbsp olive oil
      • 1/2 cup citrus fruit
      • 1 tsp honey
      • 1 pinch dill weed
      • Salt and pepper to taste

      PREPARATION

      1. Salt & pepper tuna, then flour the tuna
      2. Egg Wash
      3. Sesame breading
      4. Heat skillet with oil until very hot
      5. Sear tuna on all sides until desired doneness
      6. In a separate skillet, heat citrus, honey, and dill until just warm
      7. Place citrus salsa on plate, top with tuna
