      Shrimp & Broccoli Frittata, 2/15/13

      2 whole eggs

      4 egg whites

      1/2 cup nonfat cottage cheese

      1/2 cup cooked shrimp

      1/2 cup small broccoli florets

      2 oz low fat mozzarella

      pinch of onion salt & garlic powder

      Whisk eggs & whites in a large bowl. Add all other ingredients and mix thoroughly. Lightly coat a medium size casserole dish with cooking spray. Pour egg mixture in casserole dish. Bake 30 minutes.
