      Shrimp & Pineapple Fried Rice, 4/24/13

      1 tablespoon sesame oil, or vegetable oil

      1 cup bell pepper, diced, I like to use a combination of colors ofpeppers for this.

      1/2 cup red onion, diced

      2 cup pineapple, diced, you can use canned or fresh.

      1 tablespoon grated fresh ginger

      3 garlic cloves, minced

      1 pound shrimp, peeled and deveined

      3 cup cooked rice, cooled

      3 or 4 green onions, diced, using the green and white parts ofonion

      3 or 4 tablespoons of soy sauce

      1 tablespoon of chili garlic paste

      1. Heat wok or non-stick skillet over medium high heat, add oil and next 5ingredients. Cook for a couple of minutes till all ingredients are hot.

      2. Add shrimp to skillet and cook, with vegetables till pink anddone, about 5 minutes.

      3. Add the remaining ingredients to pan and cook just till hot,serve immediately
