      Smoked Chicken & Bacon Quesadilla, 9/10/12

      Makes: 4 servings Prep Time: 5 mins Cook Time: 15 mins Ingredients 1/2 cup chicken, shredded or chopped fine 1/2 cup mangoes, chopped 1/2 cup Monterey jack cheese, shredded 4 flour tortillas 4 slices bacon, cooked & chopped 1/4 cup sour cream 1/4 cup fresh cilantro, chopped 1-2 jalapeo, chopped Notes / Directions Smoke chicken until internal temperature reaches 165F. Can be cooked in oven if you don't have a smoker Mix cooked chicken, mangoes & cheese until well blended Spoon evenly onto flour tortillas Top with chopped bacon Fold each tortilla in half Heat a large nonstick skillet on medium-high heat Add quesadillas Cook on each side until lightly browned Mix sour cream, cilantro & jalapeos in mixing bowl Top each cooked quesadilla with sour cream mixture
