      Trio's Garden Fresh Fried Rice with Hoisen Chicken 7/29/13

      Garden Fresh Fried Rice with Hoisen Chicken

      5 cups cooked and cooled white rice

      1 cup small diced Zephyr or summer squash

      1/2 cup small dice bell pepper

      1/2 cup 1/2 inch green beans

      1/2 cup cherry tomato halves

      4 T. Sesame oil

      1 T. Soy sauce

      2 t. Salt

      1 T. Toasted sesame seeds

      1 chicken breast per person

      1 T. Hoisen sauce

      Heat oil in skillet. Add squash and sautee lightly. Add rice, green beans and bell peppers. Toss mixture vigorously. Add Soy sauce and salt to taste. Grill chicken and brush with hoisen sauce. Slice and serve over rice.
