      Vegetarian Burgers, 3/28/12

      1 can (16 ounces) black or pinto beans, drained and rinsed. I like to use half black and half pinto.

      Mash beans up with a fork or potato masher, I don't like to mash to a creamy consistency, leave it a little chunky.


      In a skillet, saute the following ingredients:

      1 tablespoon olive oil

      1/2 onion, finely diced

      1/2 bell pepper, finely diced

      1 cup fresh mushrooms, diced

      saute veggies till the are tender, pour off any excess liquid, let cool and add:


      1 egg

      1/2 cup bread crumbs, I use panko

      2 tablespoons Lipton's{}Recipe Secrets{}Onion and Mushroom soup mix


      stir mixture into beans, mix well and form into patties, cook in a hot pan or hot grill. I have found that it works best for me if I use foil when cooking on a grill.

      Serve on a burger bun with your favorite hamburger condiments.
