Black eye pea sauce


1 qt black eye peas

2 tbsp. chopped shallots

2tsp. chopped jalapeno

1 tsp fresh herb

2 tsp diced red bell pepper

3tsp diced thick sliced bacon

2 qt chicken stock

Salt pepper to taste



In large pot sweat shallots, peppers,& bacon for 2 min

Add peas & herbs & cook for 3min

Deglaze with vermouth & add stock

Reduce heat & let simmer until peas are al dente

Take 1/4 of peas & blend smooth in blender & add back to pot

Let simmer for 5 min




Corn bread crust

10 oz. dried corn bread

1tsp chopped parsley

1/2 cup flour



combine all ingredients in food processor

& blend until it become fine texture
