3 Seed Salmon with Kale Pesto/12/13/13

      Sunflower seeds 1 tsp

      Flax seeds 1 tsp

      Sesame seed 1 tsp

      Skinless Salmon filet 6-8 oz

      Paprika 1/2 tsp

      Salt to taste

      Pepper to taste

      Extra Virgin Olive oil 1/2 cup

      Combine all seeds into food processor and coarsely chop.

      Season salmon with salt, pepper and paprika. Dip Salmon into olive oil and then coat with seed mixture. Heat skillet over medium high heat and addolive oil and place salmon seed side down into skillet. Sauté 3-4 minutes until seeds are toasted andbrown, turn salmon and cook on back side until desired done ness, 2-3 minutesmore.

      * 6 cups washed baby kale

      * 1/2 cup olive oil

      * 1 tablespoon minced garlic

      * 1/2 cup grated parmesan

      * 1/2 cup chopped marcona almonds (or saltednut of your choice)

      * 1 heaped teaspoon lemon zest

      * 1 tablespoon lemon juice

      * 1/2 teaspoon kosher salt

      * 1/4 teaspoon black pepper

      Combine all ingredients into food processor and puréeuntil desired consistency.
