Anchovy Sauce with Pasta, 8/28/13

3 tablespoon olive oil

3 tablespoons butter

1 large onion, sliced thin

2 garlic cloves, diced

can anchovy's, drained, diced and{}reserve liquid

1/2 cup chicken stock

1 teaspoon black pepper

1/4 cup parsley, chopped

1 pound pasta, I like linguini for this recipe


1. In a large skillet, mix together olive oil and butter, addonions and garlic, turn to low and cover. Cook onions for 15 to 20 minutes.

2. Add chopped anchovies to onion and stir to break up theanchovies. Add the chicken stock, pepper to sauce.

3 Cook pasta as directed on package, drain and add to anchovysauce, toss together on low heat, until sauce starts to thicken.

4. Turn off heat and addthe parsley, toss together and serve. If your sauce is to thick, and you wantyour pasta to taste more salty and flavored with more anchovy, add the reservedliquid for the can of anchovies.
