Bacon & butter sweet potatoes

  • 4 sweet potatoes, sliced in half (horizontally)
  • 2 tablespoon butter, melted
  • 1/2 teaspoon salt, to taste
  • 1 teaspoon black pepper, or to taste
  • 4 slices bacon, raw & chopped


Place potatoes on a cutting board between the handles of 2 wooden spoons.

Using a sharp knife, make slices 1/4" apart across the short side of each potato

Make slices all the way down to the wooden handles - the handles will make the slice depth even

When all potatoes are sliced, place them cut side up in a shallow baking dish.

Drizzle with half the butter.

Season with salt & pepper

Bake 40 minutes at 350F

Remove from oven

Drizzle the remaining butter over potatoes and sprinkle with the raw, chopped bacon

season with a little more salt & pepper

Place back into the oven and bake for another 20 minutes or longer for larger potatoes

Note: you can use other types of potatoes if you prefer

And, you can peel potatoes if you don't want the skin. If you peel them, be sure to place the potatoes in water so that they don't turn brown. Only take them out of the water just before cooking begins.
