Baked gnocchi with Italian sausage

1 tablespoon olive oil

1/2 cup onion, diced

1/2 cup bell pepper, diced

1 tablespoon minced garlic

1/2 pound Italian sausage, casing removed

red pepper flakes to taste

1 tablespoon Italian seasoning

1 can diced tomatoes, 14 ounces

1 package frozen spinach, thawed and drained

1 cup ricotta cheese

1 egg

1/2 cup Parmesan cheese

1 tablespoon Italian seasoning

salt and pepper

1/2 pound Gnocchi, cooked as directed and drained

1/2 cup heavy cream

1 cup Mozzarella cheese, grated

1. In a hot skillet add the olive oil, onion, bell pepper, sausage and red pepper flakes. Cook till sausge is done and add the diced tomatos, cook till hot.

2. In a mixing bowl, stir together the spinach, ricotta cheese, egg, Parmesan cheese and salt and pepper,

3. Cook the gnocchi as directed, drain and add the cream.

4. In a baking dish, layer half the sausage mixture, top with all the spinach mixture, all the gnocchi and remaining sausage mixture.

5. Top with the mozzarella cheese and bake at 375, uncovered for 30 minutes.
