      Blueberry Buerre Blanc, 11/21/13

      Brave New Restaurant

      • 1/2 cup dried blueberries
      • 2 tsp seasoning salt
      • 1/4 cup white balsamic vinegar
      • 2-3 shallots, diced
      • 1 cup white wine
      • 1/2 lb unsalted butter, room temp

      PREPARATION

      1. Reduce everything except butter
      2. Puree mixture
      3. Slowly add butter by whisking
