      CARAMELIZED ONION PUDDING, 8/8/13

      1 1/2{} sticks of butter{} (12 tablespoons)

      9cups thinly sliced onions

      9eggs

      3tablespoons{} flour

      1teaspoon{} sea salt

      1tablespoon baking powder

      2tablespoons{}{}{}{} sugar

      3cups{}{} heavy cream{}

      Preheatoven to 350 degrees. Melt butter in large skillet over medium heat. Add onionsand cook slowly , stirring frequently, until dark brown and caramelized, about30 -45 minutes. Pouronions into greased 9" x 11" pan. In a blender, combine eggs, flour, sugar,salt and baking powder. Blend well then add the cream and blend briefly. Pourmixture over the onions and bake for 1 hour or until set.

      Ilike to serve with a dollop of sour cream mixed with horseradish and choppedparsley.
