Caribbean Black Bean Salad, 4/8/14

      Whole Foods

      1 C pineapple juice (not canned)

      1 C orange Juice (not canned/not from concentrate)

      2 Cans black beans (drain and rinse thoroughly)

      1 C diced red pepper

      1 bunch of green onions very thinly sliced on bias

      1 T basil chopped

      1 T spearmint chopped

      1 1/2 t minced ginger

      2 small mangos or 1 large - peel and dice

      1 avocado peel and dice

      1 1/2 t chili powder

      pinch of cayenne -- optional

      Bring juices to a boil and reduce to 1 cup of liquid. Put in refrigerator or freezer to quick chill.

      Combine first 8 ingredients. Add chili powder to juice reduction. Pour over salad and toss gently.

      Chill thoroughly. Toss occasionally while chilling. Enjoy!!!
