Corned Beef and Cabbage:
1 corned beef (pkg w/spices)
2 cans of beef c...consume'
1 onion (quartered)
Celery (inside leafy parts-save ribs for next part)
3 carrots (cut in big chunks)
2 bay leaves
Turn crock pot on low and add vegetables and bay leaves. Rinse meat and put on top-fat side up. Sprinkle with spice packet. Add the soup and enough water to cover meat. Cook on low for 8-10 hours. Let cool and put in fridge.
Remove fat layer from top of pot. Set meat aside and slice. Strain broth into Dutch oven. Discard vegetables and bay leaves. Add an additional can of beef consume' if you think you need more liquid.
Bring broth to low boil and add:
1 onion chopped
3-4 ribs of celery sliced thick
3 carrots peeled and sliced thick
10-12 new potatoes
1 large cabbage coarsely chopped (core removed)
Gently boil for about an hour or until vegetables are tender. Adjust seasonings with salt, pepper and cavenders. Add sliced meat at the very end just to warm up, Serve with crusty bread and butter and enjoy!
