      Cream of Pumpkin Soup, 11/11/13

      Ashley's at the Capital Hotel

      3 C Finely Diced Onions

      4 C Finely Diced Leeks

      Salt/Pepper TT

      2lb Pumpkin

      1 Qt Poultry Consommé

      2 C Cream

      1 C Butter

      Nutmeg TT

      1) In a pot, sweat butter with onions, leeks, salt and pepper

      2) Cook 10 Minutes.

      3) Add Pumpkin.

      4) Stew for 10 minutes.

      5) Add Poultry Consomme, Cream, and Nutmeg TT

      6) Cook about 1 Hour.

      7) Add Butter, Mix, and Strain.

      Serving Suggestions: Cheese, Fresh Herbs, or Cooked Fresh Mushrooms
