      Pork Loin Roast with Crunchy Pear Salsa, 3/14/14

      Crunchy Pear Salsa

      • 3 8-ounce firm but ripe Bosc pears,peeled, cored, finely chopped
      • 1/2 cup finely chopped red onion
      • 1/2 cup chopped fresh cilantro
      • 1/4 cup chopped fresh mint
      • 1/4 cup fresh lime juice
      • 1 large serrano or jalapeƱo chiliwith seeds, minced
      • 1 teaspoon sugar
      • 1 teaspoon olive oil

      Pork Loin Roast

      • 2-4 pound pork loin
      • Salt to taste
      • Pepper to taste
      • Paprika 2T
      • Granulated Garlic 2T

      Preheat oven to 450. Rub porkroast with salt and pepper. Put it in a large roasting pan and put in oven,turning it to brown on all sides, 20-30 minutes. Remove the roast and let restfor 10-20 minutes. Slice and serve.

      Combine all ingredients in medium bowl. Seasonwith salt and pepper. (Can be made 3 hours ahead. Cover; chill.)
