      Crustless Spinach & Bacon Quiche, 4/17/13

      Ingredients

      Crust

      • 2 tablespoons butter, softened
      • 2 tablespoons finely grated Parmesan cheese

      Custard

      • 2 cups half-and-half
      • 2 large eggs
      • 1 tablespoon flour
      • 1/2 teaspoon kosher salt
      • 1/2 teaspoon white pepper
      • pinch Cayenne pepper

      Fillings

      • 1-10 ounce pkg frozen chopped spinach, thawed and drained
      • 8 slices bacon, cooked and crumbled
      • 2-tablespoons fresh chives, chopped
      • 1/2 cup Provolone cheese, diced
      • 1/2 cup Swiss cheese, diced

      Directions

      Preheatoven to 350 degrees F. {}Brush pan with the soft butter and sprinkle thegrated Parmesan evenly on top.

      Whiskthe half-and-half, eggs, flour and all seasonings in a large glass measuringcup or bowl. Spread half the filling evenly in the pan, top with about half thecheese and chives; repeat with remaining filling, cheese and chives.{} Pourcustard mixture over top.

      Bake until the quiche is just set in the center,about 40 to 50 minutes. Cool completely on a rack before serving.
