      Cucumber, Radish and Grilled Corn Salad, 7/12/13

      1 cup sliced Radish

      2 cup diced seeded cucumber

      1/4 cup small diced seeded jalapenos

      2 t minced ginger

      1 T minced garlic

      1/4 cup chopped parsley

      1 1/2 cup grilled corn

      1/4 cup cider vinegar

      1/2 cup olive oil

      Salt and pepper

      Juice of 1 lemon

      {}

      Combine all{} ingredients except vinegar, oil, seasonings and lemon in a bowl and mix well.{} Combine remaining ingredients in a mixing bowl and mix well.{} Pour dressing over salad and toss to coat.{} Serve alongside BBQ brisket sandwich.
