Deviled Egg & Macaroni Salad, 7/2/14

Alley Oops 12 eggs, hard boiled and peeled 8 ounces macaroni, cooked as directed on package and rinsed in cold water and drained 1/2 cup red onions, diced 1/2 cup green onions, chopped 1 cup celery, chopped 1/4 cup sweet relish 2 tablespoon jalapenos, diced 1/2 cup mayonnaise 3 tablespoons mustard 1/4 cup cider vinegar salt and pepper to taste 1/2 teaspoon paprika 1. Cut 2 eggs in slices and set aside for decorations, cut remaining eggs in half and separate the yolks form the whites, Chop the whites and set aside. Put the yolks in a mixing bowl. 2 .In a large bowl, toss together the egg whites, pasta, onions, celery, sweet relish and Jalapenos. 3. In the mixing bowl with the yolks, add the mayonnaise, mustard, vinegar,salt, pepper and paprika. Mash all this together for the dressing. 4. Gently fold the dressing into the pasta mixture. Top with reserved sliced eggs and sprinkle with paprika. P.S. This is a great side dish or you could add canned tuna or grill salmon to dish to turn it into an main course.
