Grilled salmon stuffed potato

Ingredients

6 ounces salmon fillets, grilled

8 ounces gold potato, cooked whole in oven (unwrapped)

1/2 cup greek yogurt, 2% fat

1 tablespoon grated Parmesan cheese

1/4 cup green onions

6 stalks asparagus, grilled or roasted

black pepper, to taste preference

1 tbsp soy sauce

chipotle seasoning

garlic

Directions

set oven to 375F

bake potatoes until soft (do not wrap with foil)

season salmon with pepper, chipotle seasoning, and soy sauce

grill or bake salmon until you reach an internal temperature of 125F (about 10 minutes in the oven at 375F

once potatoes are cooked, slice down the middle and remove the insides with a spoon.

Place contents in a mixing bowl

mix potato with Greek yogurt, green onions, and minced garlic - stir until creamy

add cooked salmon to the mixture and blend with a fork

season with salt to taste

top with parmesan cheese
