Hummus pasta

1 can chickpeas, drained

1 tablespoon minced garlic

1 teaspoon salt

3 tablespoon olive oil

juice of one lemon

Blend above ingredients in food processor till smooth

2 tablespoon olive oil

1 red onion, Julian sliced

1 tablespoon minced garlic

1/2 cup sundried tomatoes

2 cups fresh spinach

1 cup ham, diced, optional

1/2 pound linguine, cooked as directed and drained

1. Blend the first 5 ingredients in a food processor till smooth, you may need to add some water to get to correct consistency.

2.In a large skillet, saute the onions in 2 tablsspoons olive oil, cook till soft.

3. Add the garlic, sundried tomatoes and spinach and cook till spinach is wilted. Add the ham now (optional).

4. Add the blended chickpeas to the skillet and cook till hot, add the pasta and mix together.
