4 chicken breast, boneless and skinless
2 tablespoon olive oil
salt, pepper and garlic
1 cup Greek yogurt
1 cup sour cream
juice of 1 lemon
1/2 cup cheddar cheese, shredded
2 sweet potatoes, cooked
green onions, diced
1. In a skillet, heat olive oil, season chicken breast with salt, pepper and garlic. Brown chicken in oil, both sides, and removed chicken.
2. In same skillet, add yogurt, sour cream and lemon juice, season with salt and pepper and bring to a high heat.
3. Cut cooked sweet potatoes in half,cut length wise, and place in bottom of a baking dish. Layer chicken on top of potato, then sour cream mixture.
4. Cover and bake for 30 minutes at 375. Remove cover and sprinkle with cheese, return to oven till cheese is melted. Top with green onions and serve.
