      Loaded Spinach Dip, 3/19/14

      1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
      1/4 cup chopped fresh basil

      2 tablespoons chopped green onion

      1 (8 ounce) package cream cheese, softened
      1 cup grated cheddar cheese (2-1/2 cups)
      1 cup grated Monterey jack cheese (2-1/2 cups)
      8 ounces sour cream
      1 teaspoon spicy brown mustard
      2 teaspoons minced garlic
      1/4 teaspoon sea salt
      1/4 teaspoon fresh ground black pepper
      3 dashes hot sauce

      Mix all ingredients, reserving 1/2 cup each of grated cheeses in oven safe dish. Microwave on high for 3-4 minutes; stirring occasionally. Bake in preheated 350 degree oven 10-12 minutes until bubbly. Add rest of grated cheeses; bake additional 5 minutes until cheese is well melted. Serve hot with pita or tortilla chips.
