      • 1 6oz Mahi Mahi Filet
      • 2 TBSP Extra Virgin Olive Oil
      • 2 TBSP Butter
      • 2 TBSP All Purpose Flour
      • 1 TBSP Diced Shallots
      • 1/2 Cup White Wine
      • 1/2 Cup Grapes
      • Salt & Pepper to taste

      1. Heat olive oil in a skillet until almost smoking
      2. Lightly season & flour the filet
      3. Saut approximately 2-3 minutes per side
      4. Remove filet from pan
      5. Drain olive oil
      6. Add white wine & shallots
      7. Reduce until almost dry
      8. Add butter and grapes
      9. Adjust seasoning as needed
