Melon two ways

1 fresh melon

1 melon that has been dehydrated

3 tbsp goat cheese

1 tbsp cream

S & P to taste

1 tsp olive oil

1 tsp balsamic vinegar

Fresh mint

You'll need to start this recipe a couple of days before to give yourself time to dehydrate to melon. To do so just buy a home dehydraytor, available at most large hunting stores( bass pro, gander mtn...), and follow the instructions to make melon chips. To make the dish, mix the cheese and cream and adjust the seasoning, cut the fresh melon into cubes. assemble by topping a cube of fresh melon with the cheese mixture and then a chip of melon, garnish with fresh mint and then drizzle with the olive oil and vinegar. VIOLA!!!
