Omelet Sandwich with Cajun Dipping Sauce, 2/18/14

2 tablespoons butter, divided
1/4 cup yellow onion, chopped
1/4 cup celery, chopped
1/4 cup green bell pepper, chopped
2 teaspoons garlic, minced
1/2 cup crushed tomatoes
1/2 cup chicken stock
4 eggs, beaten
1/4 cup milk
1 1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon black pepper, ground
1/4 teaspoon thyme (dried)
1/4 teaspoon oregano (dried)
dash cumin
3 ounces Ham (smoked is preferred), chopped
2 ounces (cooked) bacon, chopped
4 slices American Cheese
4 slices Buttermilk Bread

Notes / Directions

Make Chicken Seasoning:
mix all seasoning and spices together: salt, paprika, cayenne, onion powder, garlic powder, black pepper, thyme, oregano and cumin. combine in a mixing bowl and set aside - this should make 4 tablespoons

For Dipping Sauce (for 2 omelets)
melt 1 tablespoon of butter in a 10" skillet over medium-high heat.
when it sizzles, add the onion, bell pepper and celery and 1 tablespoon of Chicken Seasoning mix.
Cook and stir occasionally for 2 minutes, then stir in minced garlic
continue to cook until the vegetables stick to the bottom of the skillet (about 2 more minutes)
stir in the crushed tomatoes and cook about 1 minute
add Chicken stock and cook, stirring occasionally, until the vegetables are soft and the sauce is thick, about 15 minutes.
Remove from heat

To make 1 Omelet:
melt 1 teaspoon of butter into a 6" skillet over medium heat
add half of the chopped ham and half of the chopped bacon
mix until coated with butter

crack 2 eggs into a mixing bowl and season with salt & pepper to taste
whisk vigorously with milk
add egg mixture to pan and gently stir until ingredients are evenly distributed.
allow to cook for 1 minute, until the bottom of the eggs are set
using a heat resistant spatula, gently flip the omelet over and allow to cook for another 30 seconds or until the eggs are fully cooked.
Fold omelet in half, add 2 slices of American Cheese to top

To assemble the sandwich:
brush butter on both sides of the bread
add a little mayo to one side of each slice (like you would normally make a sandwich)
add folded omelet to bottom slice of bread (side with mayo gets the omelet)
top with the other slice of bread (mayo side to omelet)
