Pan gravy starter for pork or poultry

LOW SODIUM GRAVY / serves 12
2 cup Carrots, Fresh, Pieces, 1"
1 cup Celery, Fresh, Chopped
1 cup Onions, Red, Fresh, Chopped
3 tsp Oil, Olive
4 cup Low Sodium Chicken Stock
2 each Thyme, Fresh, Sprig
3 tbsp Cornstarch
t.taste Fresh Black Pepper
Combine cold cornstarch & chicken broth until incorporated. Heat on medium high heat until simmer. Add remaining ingredients and simmer. Hold warm until pan juices from pork are done. Add Deglazed pork pan juices. Simmer and adjust seasoning as needed.
