      Pecan Trout, 6/5/14

      Peter BraveBrave New Restaurant Ingredients: 1 8oz filet trout 1/2 cup ground fine pecans 1/4 cup flour 2 eggs 1/2 cup milk 1/2 cup water Salt & pepper 3 tbsp butter Limes for garnish Preparation: Salt & pepper trout Lightly flour, then dip in egg wash (eggs, milk, water) Lightly press ground pecans into trout on flesh side Heat large skillet with 1 1/2 tbsp butter until foaming and brown Sauté trout, pecan side down, approx 2 minutes, or until golden brown Flip over and finish in 400 oven for 2 more minutes Remove from oven and plate trout Return skillet to heat, squeeze lime juice and butter in skillet and heat Pour lime/butter over top and serve
