      Poached Pears, 12/5/13

      INGREDIENTS

      • 2 cups red wine
      • 1 cup sugar
      • 2 sticks cinnamon
      • 2 lemons and their zest
      • 1 vanilla bean
      • 1 tbsp whole cloves
      • 1 tsp ground allspice
      • 6 pears, peeled and cored

      PROCEDURE

      • Combine all the ingredients, except for pears, in a saucepan
      • Bring to a boil, reduce down to a simmer
      • Add pears
      • Lightly poach, approximately 20 minutes
      • Remove from heat and store covered overnight in refrigerator
      • To serve, lightly heat and serve with custard sauce and shortbread as garnish
