  • 2 thin medallions Pork Tenderloin
  • 2 cups seasoned bread crumbs
  • 2 cups flour
  • 4 eggs
  • 1 cup milk
  • 3 tbsp butter
  • 1 lemon

PREPARATION

  1. Set up a breading station with 3 containers - 1 flour, 1 egg wash (combine eggs and milk), and 1 with bread crumbs
  2. Dredge pork in flour, then egg wash, then finish in bread crumbs
  3. Heat butter in skillet until very hot
  4. Carefully sauté pork on both sides - approximately 2 minutes each, then remove
  5. Serve with a wedge of lemon
