Quick Blackberry Cobbler, 6/23/14

Wye Mountain Flowers & Berries6 Cups! Blackberries3/4 Cup! Sugar3 Tblsp.! Cornstarch3/4 Cup! Butter (divided)1 Box!! Yellow cake mixButter or spray either a 10-12 inch cast iron skillet or 8 X11 inch baking dish.Combine blackberries, sugar and cornstarch in mixing bowl. Put about 1 cup ofberry mixture in bottom of coated skillet and crush to release the blackberryjuices. Add remaining berry mixture and pour 1/4 cup of melted butter over top.Toss lightly to moisten with berry juice.Place cold butter in mixing bowl and cut into chunks. Pour cake mix over butterand cut in with pastry cutter until thoroughly mixed but coarse textured.Sprinkle the cake mixture evenly over the top of the blackberries.Bake in 425 degree oven for about 35-40 minutes
