Roasted rosemary chicken

1 whole chicken

Fresh Rosemary

Salt & pepper to taste

1/2 onion

1 rib celery

Wash and dry the chicken then pat dry, season inside with S&P and stuff with the celery, onion and some fresh rosemary, put fresh rosemary under skin then season outside of bird. Place in a roasting pan and roast in a hot(450 degree) oven for aprox 30 min, test by inserting a knife in the thigh to insure juice runs clear.
